This exquisite micro-lot hails from the picturesque highlands of Palestina in Colombia’s Huila department, where altitudes of 1,200–2,000 metres create ideal growing conditions for specialty coffee. The cherries undergo an innovative anaerobic natural process: fermented whole in sealed tanks for 24–72 hours with meticulous temperature and pH control, before being slowly sun-dried on raised beds for 15–25 days.
The resulting profile presents florals, grape, and chocolate.
