Finca Santa Mónica is owned by Jairo Arcila, a third-generation coffee grower in Quindio, Colombia, who purchased it in 2002. He replanted the farm with Costa Rica-95 and Castillo, which are varieties resistant to coffee leaf rust (CLR), a common threat to production in the region.
This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, lychee and wine yeast were added. The cherries were then pulped and placed to dry on raised beds until the ideal moisture content was achieved.
This coffee boasts flavours of lychee rose, black plum juice, and a syrupy sweetness.
