The Vergara family's coffee from Colombia's Las Flores first achieved the #16 spot in the 2006 Cup of Excellence competition. With the son, Johan joining the family business, they went on to champion in the 2020 Cup of Excellence. Since then, Johan has focused on continuous training and learning across the coffee chain, including roasting and experimental brewing.

The cherries undergo a 24-hour oxidation process to enhance the fruity aroma, followed by a 60-hour fermentation period and thermal shock with 50-60°C water to achieve the desired flavour profile.

In the cup, it offers flavours of floral, white pepper, and coriander seed.
