About 40 years ago, the estate owner's grandfather, Dagoberto, purchased this land. With extensive experience as a coffee quality analyst, the estate owner places a strong emphasis on ensuring the exceptional quality of coffee grown on the family farm.
The coffee cherries undergo a precise process: they are bagged and fermented in an oxygen-free environment for 40 hours. Then, after the skins are removed, they undergo another 40 hours of anaerobic fermentation, followed by approximately 24 hours of oxidation.
This cup offers a taste experience of ripe fruits, syrupy sweetness, and a hint of wine-like notes.
