Finca Santa Mónica is owned by Jairo Arcila, a third-generation coffee grower in Quindio, Colombia, who purchased it in 2002. He replanted the farm with Costa Rica-95 and Castillo, which are varieties resistant to coffee leaf rust (CLR), a common threat to production in the region.
This coffee was exposed to a dry aerobic fermentation of 24 hours. The cherries were then exposed to a dry anaerobic fermentation of 50 hours inside rum barrels. The coffee was placed on raised beds until the ideal moisture content was achieved. Finally, the coffee was then rested inside rum barrels for 10-20 days.
This cup delivers a taste experience with hints of blueberry, rum, and dark chocolate.
