As a third-generation coffee producer, Jenifer Rojas grew up immersed in coffee culture. In 2019, she revitalised large portions of the family farm with exotic coffee varieties and introduced innovative processing methods, including both anaerobic washed and natural techniques.
The cherries undergo a 90-hour deep fermentation process in a sealed, oxygen-free environment, which enhances their complexity and unlocks distinctive aromatic layers. Following fermentation, the beans are sun-dried to perfection until they reach optimal moisture levels.
Expect vibrant flavours of red fruits and citrus with a subtle fermented nuance in every cup.
