Los Nogales, the champion of the 2005 Colombia First Cup of Excellence, is not just a farm but also a research and innovation centre that applies biotechnology to enhance coffee production.
Harvested coffee cherries are cleaned, and naturally collected bacteria and yeast are added during fermentation. Temperature and microbial activity are monitored to halt fermentation at the optimal point, facilitating efficient mucilage removal and reducing water usage. By-products are recycled into fertilisers, promoting sustainability.
The cup features flavours of apricot, mandarin orange, and Japanese cheesecake.
