Tiofilo Perales Cotrina's La Mandarina farm in Huabal, Jaen benefits from favourable climate, soil, and elevation - ideal conditions for growing his cherries. As a member of the Cedros Cooperative since 2017, Tiofilo dedicates exceptional care to his coffee, which is evident in the quality of his coffee.

The coffee beans from Tiofilo’s farm undergo the wash processing method to have a well balanced taste between acidity and sweetness, giving it a lighter body. The coffee cherries are first depulped to remove the outer skin and pulp. The depulped cherries then undergo 12 - 48 hours of fermentation in water, where the mucilage is broken down, after which the mucilage is washed off, resulting in these crisp, flavourful, coffee beans. 

This coffee presents flavours of citrus, lemon Ceylon tea, and subtle herbal notes.
